In the process, 90% of the nutrients have been eliminated rendering it an empty carbohydrate, a SUBSTRATE not a food.
Remember grains are alive, but flour is dead and in a state of decay, ± 3 days after milling or cracking it become rancid, carcinogenic and inflammatory. Hunt and eat should be our motto. Only mill the grains as required for the day.
